This is not your typical cauliflower mash – we know those have been tried and tested. However, by adding nutritious and protein-packed bone broth, you will elevate the flavour 10-fold. Your guests will thank you; your gut will appreciate you and dinner will be the best one ever!

Bone Broth Vegetable Mash
Ingredients
- 1 cup parsnip, peeled and cut into ½ inch cubes (approx. 1 large)
- 4 cups of cauliflower, cut into ½ inch florets and stems (approx. 1 small head)
- 2 tbsp butter + 1 tbsp butter
- 2 cloves garlic, pressed or minced
- 1/4 cup Organika Chicken Bone Broth or Beef Bone Broth powder
- salt and pepper to taste
- Optional: fresh chives and parsley
How-to
- Heat butter in a medium saucepan pen on medium heat until foaming subsides.
- Add the parsnip, cauliflower, garlic and bone broth powder and sauté until fragrant. Add generous pinch salt.
- Cover with 1 cup of water and bring to a gentle simmer and reduce heat to low. Simmer for 10 minutes uncovered. Check parsnip for doneness (a fork will go through it with some resistance). Add additional water and simmer longer if pan gets dry before vegetables are soft.
- Remove from heat and transfer to food processor. Process until smooth.
- Season with additional salt and pepper to taste.
- Add an additional tablespoon of butter on top of hot mash and garnish with chopped herbs.
Serve immediately.
