Good news for baking lovers! Baking can be about more than a fun activity or delicious treats; it can also be a great opportunity to
relieve stress and anxiety. Even more so if you're including
adaptogens in your recipes - they strengthen your overall stress response! For a baking sesh with extra-soothing results, try out this amazing carrot and "Calm" Chaga Mushroom powder muffin recipe from
Meghan De Jong.
Carrot & Chaga "Calm" Muffin Recipe
Dry
- 1 cup spelt flour
- 1 cup whole rolled oats ground into a flour

1 Tbsp. Organika “Calm” Chaga Mushroom powder
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. sea salt
- 1/4 tsp. nutmeg
Wet
1 mashed ripe banana (thawed from frozen works best)
3 pasture raised eggs
1/3 Cup pure maple syrup
1/3 Cup raw cane sugar
2/3 Cup melted coconut
1 tsp pure vanilla extract
1.5 cups grated carrots packed firmly
Optional: chopped dates or raisins
Instructions
- Place oats in a blender and mix until you reach a fine flour like consistency
- Put ground oat flour into a large bowl followed by all other dry ingredients. Stir well
- Place all wet ingredients (except carrots) in a blender (or in a bowl to mix with an electric mixer). Blend/mix until well combined
- Add wet to dry and lightly mix
- Fold in grated carrots and chosen mix in – be careful not to over mix at this stage

Place batter in lined muffin tins and bake at 350oF for 17-20 min
- You’ll know they are ready when you press a muffin top and it lightly springs back to you
