Cake for one, in one minute!
This personal-sized, mini mug-cake is a delicious way to treat yourself at the end of the day or to satisfy that mid-afternoon craving. Deliciously gooey chocolate flavour made with good-for-you collagen in a cup!
Chocolate Enhanced Collagen Mug Cake
Ingredients
- 3 tablespoons almond or all-purpose flour
- 2 tablespoons Chocolate Enhanced Collagen
- ⅛ teaspoon salt
- ¼ teaspoon baking powder
- 1 tablespoon melted butter, margarine or coconut oil
- 3 tablespoons milk of choice
- ½ teaspoon pure vanilla extract
- 2 tablespoons chocolate chips
Note: this makes about ¼ mug/cup, so we recommend doubling the recipe for a larger portion
How-to
- Add the dry ingredients (the first 5) to a wide mug. Stir to combine.
- Pour in the oil, milk and vanilla into the mug with the dry ingredients and stir with a small fork or spoon.
- Stir 1 tablespoon of chocolate chips in the batter, and then top the other tablespoon on top.
- Microwave the mug cake for 1min.
- Serve immediately (with coconut whipped cream and strawberries?) and enjoy!
Recipe Notes: Instead of dark chocolate chips, add butterscotch chips or peanut butter chips. Try to not overcook, it may get too dense.
