Coconut Pumpkin Fat Balls

Gluten-Free | Vegan

Ingredients:

  • 1 cup unsweetened coconut shreds
  • 1/8 cup Organika's Enhanced Collagen (optional)
  • 1/3 cup pumpkin purée
  • 3 pitted medjool dates
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/4 raw pumpkin seeds
  • 1/4 raw sunflower seeds
  • 2 tbsp hemp seeds
  • 1 tsp cinnamon
  • 1 tbsp pumpkin spice blend
  • 1 inch piece of ginger
  • 1/3 cup coconut oil, melted
  • 3-4 tbsp coconut milk
  •  1/2 tsp salt

Directions:

  • Put all dry ingredients into food processor and blend for two minutes.

  • Then add in the wet ingredients and blend for another minute or so.

  • Roll into balls and toss in shredded coconut then place in the fridge to chill.
