Coconut Pumpkin Fat Balls
Gluten-Free | Vegan
Ingredients:
- 1 cup unsweetened coconut shreds
- 1/8 cup Organika's Enhanced Collagen (optional)
- 1/3 cup pumpkin purée
- 3 pitted medjool dates
- 1/2 cup walnuts
- 1/2 cup almonds
- 1/4 raw pumpkin seeds
- 1/4 raw sunflower seeds
- 2 tbsp hemp seeds
- 1 tsp cinnamon
- 1 tbsp pumpkin spice blend
- 1 inch piece of ginger
- 1/3 cup coconut oil, melted
- 3-4 tbsp coconut milk
- 1/2 tsp salt
Directions:

Put all dry ingredients into food processor and blend for two minutes.

Then add in the wet ingredients and blend for another minute or so.

Roll into balls and toss in shredded coconut then place in the fridge to chill.
