Summertime is the best time to go out and explore the outdoors! It's essential to have enough energy to get through a hike, so try out this easy-to-make Matcha Cacao Energy Bars. It's infused with our Enhanced Collagen Vitality and Maca+Cacao to give you that boost that your body needs to conquer any hike.
Matcha Cacao Energy Bars
Serves 12-15
Ingredients:
- 3 tbsp Enhanced Collagen Vitality
- 2 tsp Maca+Cacao powder
- 2 tbsp Organika Coconut Oil
- 8 tbsp water
- 1 ¼ cup rolled oats
- ½ cup almonds
- ½ cup cashews
- ½ shredded coconut, unsweetened
- 2 tbsp of each chia seed, ground flax
- 1 ripe banana
- 1 small avocado
- 1 tsp maple syrup
- Pinch of salt
Directions:
- Preheat oven to 350F and line a baking pan with parchment paper.
- Mix together water and flax seed. Set aside for a few minutes.
- In a blender, put the oats, almonds, and cashews and pulse until fine.
- In a large bowl, mix the blended mixture (step 3) with the shredded coconut, maca+cacao, collagen matcha, chia seeds and salt.
- In a medium bowl, mash together the banana and avocado. Add maple syrup, coconut oil, and flax seed mix. Stir until well combined.
- Pour the banana mix into the oats and mix well. Put the mixture into the baking pan and spread evenly with a spatula.
- Place in the oven for 20 minutes. Remove from oven and allow to cool in the pan for 10 minutes before turning out onto a cooling rack.
- Once cool, cut into bars and store in an airtight container in the fridge. Can be stored for up 5 days in the fridge or 3 months in the freezer.
