Happy “healthy” holidays!
The holidays often involve celebrating, preparing or sharing treats that are decadent and indulgent with friends and family.
Who says you can’t have that whilst also staying true to your health goals?
This year, make these delicious peppermint chocolate brownies, gluten-free and infused with collagen. Talk about “feel good indulgence” but make it holiday style.
A fresh and minty treat that will make you want to deck the halls, sing “Fa la la la la” and all that good stuff!
Gluten-Free Peppermint Candy Cane Brownies
Ingredients
- 1 ¼ cup canned sweet potato
- ½ cup nut butter of your choice
- 1 tsp vanilla extract
- 2 tbsp butter, melted or avocado oil
- ¾ cup Organika Peppermint Chocolate Collagen
- ½ tsp kosher salt
- 1 tsp baking powder
- 2/3 cup oat flour
- ¼ chocolate chips
- Optional: ¼ cup chopped candy canes
How-to
Makes 9
- Preheat oven to 350° F/176° C.
- Line an 8” x 8” baking pan with parchment paper and spray with baking spray.
- In a large bowl, combine sweet potato, nut butter, vanilla and butter and stir to combine.
- Add dry ingredients and stir to combine (it will be thick).
- Use a spatula to transfer the batter to the baking pan.
- Bake on center rack for 28-32 minutes or until a toothpick inserted in the centre comes out almost clean.
- Top with chocolate chips and candy cane pieces and press in while still warm. (optional).
- Cool in pan for 1 hour before removing.
- Slice and enjoy.
Note: This keeps in the refrigerator for up to 7 days.
