Send summer off with a delicious healthy homemade pizza! Although pizza is a summer staple, I am passionate about creating nutritious and healthier alternatives to some of my favourite foods. I am excited to share this delicious twist on pizza with you — this homemade pizza dough uses Organika’s Veggie Broth for an extra dose of wholesome organic veggies!
Healthy Homemade Pizza
Ingredients
Dough:
- 1 1/2 cups spelt flour
- 2/3 cup warm water
- 2 tbsp. Organika Veggie Broth
- 2 tbsp. avocado oil
- 1 tsp. active dry yeast
- Pinch of sea salt
Pesto:
- 1 1/2 cups fresh basil (packed)
- 1 cup spinach
- 1 cup arugula
- 1 garlic clove
- 1/4 cup pine nuts or walnuts
- 1/4 cup parmesan cheese (optional)
- 1 tbsp. lemon
- Splash of avocado or olive oil
- Pinch of sea salt
Topping suggestions:
- Zucchini
- Mushrooms
- Artichokes
- Fresh basil
- Feta or cheese of choice
How-to
For the pesto:
- In a food processor, mix together all of the ingredients until smooth.
For the dough:
- In a small bowl, combine the active dry yeast and water. Let sit for 10-15 minutes.
- In a large bowl, combine the spelt flour, veggie broth, avocado oil and sea salt. Add the water and yeast mixture and stir until just combined. Let rise for 30 minutes to 1 hour.
- Preheat the oven to 375º F.
- Roll out the dough on parchment covered stoneware to approximately 1/4 inch thickness.
- Spread the pesto (recipe below) on dough and top with your favourite toppings.
- Bake for approximately 25-35 minutes, until the dough is crisping and the cheese is melted.
